big pete’s pan fried chicken
ingredients
three chicken breasts, halved (6 pieces in total)
one cup of oat flour
two tablespoons of corn starch
one teaspoon of big pete’s steak night seasoning
one egg
instructions
cut your chicken breasts in half.
mix all your dry ingredients and set aside. in another dish, scramble or beat the egg until fully blended.
drench the chicken in the egg and toss in the dry mixture.
cook in olive oil at medium-high heat for 3 - 4 minutes per side. this won’t fully cook the chicken, but it will crisp up the breading.
bake the chicken in the oven at 400 degrees for 10 - 20 minutes.
