ingredients
one sheet of Pepperidge Farms puff pastry
One block of chopped spinach, frozen
One package of Boursin cheese
Half a teaspoon of Cajun Blast seasoning
Half a cup of smoked gouda, shredded
instructions
Thaw your spinach in a microwave. Press out as much water as you can through a colander.
Put your spinach, Boursin, and Cajun Blast seasoning in a pot. Cook on medium-low for about 5 - 8 minutes, this will reduce your moisture content a little more.
Mix in a bowl and refrigerate for 15 - 20 minutes.
Spread your spinach mixture and half of your shredded cheese evenly over your puff pastry.
Roll up the puff pastry and cut into half inch medallions. Place on a baking sheet, then sprinkle the remaining shredded cheese over them.
Bake at 375 for around 20 - 25 minutes.
