big pete’s Whipped Hot Honey Ricotta Dip

Sixteen ounces of ricotta
One fourth cup of Extra virgin olive oil
Three tablespoons of spicy honey (We prefer Mike’s Hot Honey)
Two tablespoons of Big Pete’s Cajun Blast Seasoning
Fresh parsley, chopped
Cherry tomatoes

Add ricotta and two tablespoons of olive oil to the food processor and blend until smooth. This will take longer than you think - you might need an additional tablespoon of olive oil to get a smooth texture.
Meanwhile, lightly grease a small, microwave-safe bowl with olive oil. Add honey and microwave until warm.
Evenly layer cut cherry tomatoes to your desired quantity.
Transfer whipped ricotta to a shallow serving bowl and drizzle with two tablespoons of olive oil and warmed honey.
Sprinkle with Cajun Blast, salt, and chopped parsley to taste.
Serve with crostini.
Green onions, garlic, toasted pistachios, and almonds are a nice touch.
